Perfect as a quick snack or part of a breakfast.
I had some soon to be past their bananas and didn't want them to go to waste. I personally do not like bananas but my partner loves them. He usually takes fruit as a snack to work so I thought let's change it up a bit this week.
You can try this with so many different fruits.
Equipment;
Spoon
Chopping Board
Knife
7x7" square tin or a deep baking tray
Parchment paper
Whisk
1 medium bowl
Masher or fork
Sieve
Oven on 180C
Ingredients;
200g Flour - switch for a gluten free flour & add 1 tsp of Xanthan gum
3 Ripe bananas
2 eggs
115g honey
120g Greek yoghurt
1 tsp baking powder
1 vanilla extract
50g of chosen fruits
Before you start line your baking tray or tin. This just makes it easier later on. If you are using strawberries use a straw to pop the top off, more strawberry less waste.
Okay let's start;
Preheat your oven to 180C.
In the bowl mash up your bananas, then add everything but the flour and fruits; so yoghurt, honey, baking soda, vanilla. Give it all a good mix then add your sieved flour.
Gently fold in your fruits. Pour the batter into you tin of chosen choice and bake for around 30 minutes then check it. Turn the pan round in the oven and bake for another 20 minutes.
I recommend checking every 10 minutes after the turn as baking times may vary.
Allow to cool for 15 - 20 minutes then remove from the tin.
These can store in an airtight container for around 5 days or they will freeze for up to a month. Defrost thoroughly before eating.
