Strawberry Mousse

Something simple but classy

This recipe is easy to adapt for so many different flavours.

Equipment;

Mixer / Electric Hand Whisk

Board

Knife

Scales

Measuring Jug

Sieve

Heavy bottom pot

Bowls x 2

Potatoe masher

Spatula

Ingredients;

This creates 4/6 servings

250g Strawberries

100ml Water

25g Sugar

140g Marshmallows - I suggest getting mini ones as they melt quicker

200ml Double Cream

 

Let's get started!

Star by measuring out all your ingredients first,just to make it easier as we go. Remove the tops of all the strawberries, save some for decoration if you wish.


Pour you water, sugar and strawberries in the pan. Place on a medium heat and stir until the sugar dissolves, then leave to simmer away for around 5 minutes.


In the mean time whip up for double cream until it holds its own shape, cover and place into the fridge until you need it.


Check the strawberries, they should be very soft now. Grab the potato masher and squash the strawberries down into a pulp. Turn the heat off and grab the other bowl and your sieve. Carefully pour the mixture over the sieve to collect any seeds. Once all the liquid mixture is through the sieve discard of the seeds and leftover pulp.


Pour the strawberry mixture back into the pan and place on a low to medium heat and add the marshmallows in. Stir this until the marshmallows are 80% melted this could take around 5 - 8 minutes.


Turn the heat off and remove the pan from the heat and finishing mixing the marshmallows until completely melted. Pour this mixture back into the bowl, this allows it to cool quicker.


Let the strawberry mixture cool completely. Grab the whipped double cream from the fridge. Slowly add int he strawberry mixture and fold in. This should only take a few minutes. Do not add all in one go as you may shock the cream.


Once the two mixture are combined there are two options you can do; Either pour the mixture into what you wish to serve it in and place into the fridge to set within 2 hours usually. Or cover the bowl place into the fridge and after 3 hours you can re whip it to make it more fluffy in texture and then serve.


I did not re whip it as it was quite airy and fluffy already.


Place the strawberries on top and serve!


There are many other options you can do for this mouse just switch the fruit for a different flavour. Just be aware some fruits maybe more sweet or bitter one cooked down.
