Tropical Paradise

A splash of summer






What I love about this recipe is it is very easy add alcohol if you wish!

 

I had some leftover pineapple and the sun made wanted something fun so here we are;

This recipe overall took around 5-8 minutes .








Equipment;

Ice tray

Hand whisk

Spatula

Blender

Knife

Chopping board

2 bowls

Sieve

Zester (To save the zest from the lemons and limes for other things)


Ingredients;

This makes 1 drink

The Pineapple drink;

Peeled Pineapple - either use half tinned or about 1/4 of a fresh pineapple

Juice of 2 limes

Juice of 1 lemon

Handful of ice

2 tbsp Cranberry juice


The cream top;

100ml of double cream or coconut cream

1 tsp flavouring - I used vanilla


Optional extras;

25 ml Alcohol (Adults only!) Rum works brilliantly

(You don't have to follow the measurements because pfft who's measuring at this point)

 

To begin zest your limes and lemon save them for something else.


Juice the lemon and limes into your blender then add the pineapple and ice. Blender until smooth. You can add as little or as much ice as you like. If you wish to add alcohol then chuck that in too.


If you're blender is temperamental like mine, there'll always be a few lumps left, use the sieve over a bowl or your glass if big enough and let it drain.


Whilst that is happening grab another bowl and your electric whisk; whisk up your cream of choice. Add an flavourings you wish into this at this time too.


Once whipped up and your drink is completely sieved, pour the pineapple mixture into you're glass.


Pour the cranberry gently over so it sits on top and then using your spatula place the cream on top.


Do this gently but also don't be afraid to move it around to create fluffiness...clouds....whatever it is.


If you have a fancy little umbrella then pop that in and enjoy!
