Bean Burgers with harissa dressing - VG

A great dish to make in advance and freeze; plus these are super filling!


I had bought a lot of beans, you name the kind and I probably have it in my cupboard. I wanted to make some bean burgers I made a few months back and see if I could improve them.

This recipe overall took around 1 hour.






Equipment;

Frying pan

Chopping board

Knife

Baking tray

Parchment paper

1 small bowl

1 large bowl

Masher

Colander

Measuring spoons


Ingredients;

1 tin of Black Beans

1 tin of Cannelloni Beans (white kidney)

1 onion - diced

3 garlic cloves - crushed

2 carrots - grated

50g quick oats - If you can get Gluten Free Oats

1 tbsp. soy sauce -Yes it is vegan, Kikkoman is good brand. DO NOT INCLUDE IF GF

1 tsp cumin

1 teaspoon coriander

1 teaspoons chilli powder

1 tsp red pepper flake

Salt and pepper to taste

Sunflower oil for cooking


Any vegetable sides or salad you like


Dressing;

6 tbsp. of yoghurt - thick unflavoured yogurt works best

2 tsp harissa paste

Small amount of lemon zest

 

Who's Hungry?

To start rinse and drain both the black beans and white beans mixing together as you go. Leave these to drain whilst you start on everything else.


Crush all the garlic cloves and dice the onion, then add these with the sunflower oil over a medium/low heat, cook until softened.


Grate the carrot and add into pan. Allow to cook until the carrot has some colour; this should only take a few minutes.Remove from the heat and leave to cool slightly.


Grab the large bowl and pour the beans in. Give them a good mashing, then add the carrot and onion mix along with all the spices. Mix this really well.


Now its time to get your hands dirty, grab slightly larger than golf balls amount of the mixture to form the patties. The easiest way to do this is to for a ball in your palm and then squish down.


Once all the mixture has been used up these need to go into the freezer for around 30 minutes. I find the best way is lay the patties on some cling film in pairs and layer them between the cling film.


Whilst they are in the freezer you can make the dressing, its super simple; just mix together the harissa paste and the yoghurt of your choice in the small bowl. Place this in the fridge until you are ready to use the mixture.


In the meantime you can get on with the washing up.


After the 30 minutes remove the patties from the freezer and fry on a medium heat, for around 4 to 5 minutes on each side, be gentle with them so they do not fall apart.


Serve up with your sides of choice, I recommend either homemade chips, salsa or grilled peppers. Finally drizzle the harissa dressing on top.
