Ingredients; This serves around 10 normal sized pancakes
Scotch Pancake;
250g Plain Flour
300ml Milk
1 Large Egg
1 tbsp Baking Powder
1 tsp Cinnamon
Pinch of Salt
Butter to fry
Topping Ideas;
Bacon & Apple Sauce
Cream Cheese & Salmon
Yoghurt & Fruit
Cream cheese & Cucumber
Honey & Roast Vegetables
Chocolate & Fruit
The main step in this recipe is making the pancakes. I highly suggest making these as big everyday pancakes and then when there isn't quite enough left for another one use that to practice.
You can make these in advance and freeze them too.
Okay lets start. Sieve the dry ingredients into a large bowl, then add the egg and milk. Mix this either by hand r with an electric whisk until well combined and smooth.
Place the frying pan onto a low to medium heat, add a knob of butter and melt.
Spoon the mixture into the frying pan, you can get around 4 - 6 depending on the size of your pan. I suggest making these no bigger than the spoon you use.
Wait for bubbles to appear on the end and carefully flip them over.
When the canapes (pancakes) have been cooked you can either wait for them too cool or serve them instantly.
Place the toppings you wish and impress all your guests!
